  4. Then run through a pasta roller machine. I use Kitchen Aid pasta roller. Level 1 three times. Level 2 three times. Level 3 three times. And level 4 three times.
  5. Sprinkle some tapioca flour every time you change the level of thickness on the pasta roller.
  6. Then replace the pasta roller with a spaghetti cutter. Run the thin dough into the machine to make noodles.
  7. Sprinkle with some tapioca flour so that the noodles don't stick. The noodles are ready to use within 1 day.
  8. If you’re not cooking them all in a day, you can freeze the leftovers. Simply toss them thoroughly in tapioca flour, and transfer them into airtight freezer.

In a large pot, boil water for the lo mein noodles. Skip this step if using lo mein egg noodles, because they do not require pre-cooking. Cook the noodles until al dente, following the package instructions. Drain and rinse well in cold water. Divide the dough into two portions.
