To make the garlic butter sauteed spinach: Heat butter in a large sauté pan or skillet. Sauté garlic until aromatic, then add spinach. I cook my spinach this way all the time but do not cover it. Preheat the wok and add the peanut oil, swirling so that it comes about halfway up the sides of the wok. When the oil is hot, add the minced garlic, chile paste, and salt.
