Season with salt, black pepper, and chili powder. Add flour to create a firmer mixture, or more salsa if the mixture is too stiff. Heat a grill or grill pan over medium-low heat. In a food processor, pulse onion and garlic until finely chopped.

  1. Preheat oven to 375 F. Spread beans evenly onto a lined baking sheet & bake for 15 mins until slightly dried out (this is important to reduce mushiness of the beans)
  2. Meanwhile saute olive oil, red pepper, mushrooms, green onion & minced garlic until soft. Gently blot some of the moisture out.
  3. Place sauteed mixture in a large bowl with the remaining ingredients (except beans). Stir together & then add the black beans. Mash with a fork, leaving some larger chunks of beans.
  4. Form into patties. Bake at 375 F for 10 mins each side or grill 8 mins each side. Melt cheddar or Monterey Jack cheese on top.

Heat a grill or grill pan over medium-low heat. In a food processor, pulse onion and garlic until finely chopped. Add to the bowl along with the remaining beans and cheese, the scallion, pepper, tomato sauce and cilantro. With wet hands, form the bean mixture into four patties and transfer to a lightly oiled plate. Heat temperature is personal preference as all grills differ.
