  1. Make ready 1 lb bison liver
  2. Take 1/2 onion
  3. Make ready 8 medium mushrooms
  4. Make ready 1/2 tsp salt
  5. Make ready 90 ml white wine (1/3 cup)
  6. Take 4-6 Tbsp sour cream (a good quality one is best)
  7. Make ready 2 Tbsp olive oil

Steps to make Bison Liver and Mushroom Pâté:
  1. Cut liver into bite-sized pieces. Finely chop the onion and the mushrooms.
  2. Saute the onion and mushrooms in olive oil until onions are translucent and mushrooms are soft.
  3. Add the liver and salt and continue to cook until it has turned color on all sides.
  4. Add the wine, cover the pan with lid and steam for 7-8 minutes.
  5. Put the contents of the pan into a food processor and process into a paste. Alternatively, you could mash it up as finely as possible with a fork, mortar & pestle, etc.
  6. Put paste in a bowl and mix in the sour cream, and adjust taste with salt and pepper.
  7. Put in jars to save and store in the fridge. Serve with bread or good crackers :)
