Stir in the breadcrumbs, nuts, herbs, seasoning and cheese. Remove mushroom stems and reserve caps. Chop stems finely and place in a bowl. When the onion mixture is soft, add the tomatoes, oregano, and pepper. In a small skillet heat oil over moderate heat until hot but not smoking and cook chopped mushrooms stems, shallots and garlic, stirring until shallots are softened.
