  4. Get Whole spices (1 cinnamon stick,3 cloves,2 bay leaves)
  5. Prepare 2 tbsp oil
  6. Prepare 1 tbsp butter
  7. Take 2-3 tbsp curd or heavy cream
  8. Prepare 1 tbsp chili powder
  9. Make ready 1 tbsp coriander powder
  10. Prepare 1/4 tsp turmeric powder
  11. Get Salt as per taste
  12. Prepare 1 tsp Kasuri methi/Dry mint leaves

  14. Get 1 big onion
  15. Take 5-8 cashews
  16. Make ready 1 tomato
  17. Prepare 1 inch ginger
  18. Make ready 4 garlic cloves
  19. Make ready 2 green chili
  20. Make ready For the Kadai Masala Powder
  21. Take 1 tsp Coriander seeds
  22. Get 1 tsp cumin seeds
  23. Get 3 red chilli
  24. Make ready 1/4 tsp pepper
  25. Get 1 clove, 1 cinnamon
  26. Take 1 bay leaf

It can be served with chapati, parathas and any mild flavored rice like vegetable rice, jeera pulao, peas pulao etc. Clean mushroom as shown in the link, slice it and keep aside. Dry roast coriander seeds and red chillies for few mins until nice aroma comes. Cool down, transfer to mixer and grind it to a slightly coarse powder,Set aside.

Instructions to make Kadai Mushroom gravy:
  1. Wash and clean the mushrooms nicely and pat dry with paper towel/cloth.
  2. Dry roast all kadai masala ingredients and grind to fine powder and set aside.
  3. Then slice the mushrooms and keep aside. Cut all other veggies and keep it ready.
  4. In a pan, add 1 tbsp oil,sliced onion,tomato,ginger, garlic,green chili and saute until it turns mushy. Keep it aside to cool down completely.
  5. In the same pan, add 1 tbsp oil and saute few cubed onions,capsicum for 1 min and set aside. Then add sliced mushroom and saute for 2 mins and set aside.
  6. Add few cashews into the previously sauteed onion tomato mixture and grind to smooth paste.
  7. In a kadai, add 1 tbsp oil,butter,whole spices and let it splutter. Then add the ground paste and saute for 2 mins.
  8. Add salt,chili, turmeric,coriander powder, 1 tbsp kadai masala and mix well. Then add the sauteed mushrooms, heavy cream or thick curd(beat the curd well before adding),little water to adjust consistency and cook for 5 mins.
  9. Add the sauteed onion and capsicum, kasuri methi or dry mint leaves and mix well.
  10. Now the most delicious, spicy kadai mushroom is ready. It can be served with Chapathi,Naan Parota, Jeera rice.
