  1. Marinate the veggies and chicken in a separate bowl with the marinade ingredients.
  2. Let it set for at least 15-20 minutes (I put it back in the refrigerator)
  3. Make sure to soak and clean the bamboo skewers before use.
  4. Take out the veggies and chicken, and start arrange them into the skewers separately.
  5. Heat up your griddle or grilling pan or whatever you use to grill the kebab.
  6. When the griddle is hot enough then arrange the chicken skewers on the griddle pan, brushing with chumichurri sauce. Cook about 2-3 minutes flip it over, brush the other side with the sauce. And keep cooking until it turn brown and done.
  7. Repeat with the veggies kebab.
  8. Arrange all the kebabs on the large plate and served along with chimichurri sauce, and steamed rice or tortillas. Enjoy!
