  3. Stop heat and stir in the bourbon and vanilla extract. Pour into a small jar or cup and use immediately or save for later.
  4. Pour over cakes, ice cream, etc. It will get stiff when cooling, so you will want to lightly heat it in the microwave if it is not runny enough.

I doubled the bourbon and used fat free half/half and added peppercorns, a pinch of fresh thyme and a table spoon of plain greek yoghurt. Watch closely as not to let it burn. Turn off burner and remove from heat and slowly add cream while stirring. Add pinch of salt and bourbon and place back on still-warm burner for another minute while stirring. In a medium saucepan, bring the sugar, water and corn syrup to a boil over high heat.
