Stir gently to distribute the ingredients and evenly coat the tofu with sauce. Divide the sweet and sour tofu onto plates and serve with rice. Top with scallions and sesame seeds. Once the oil is hot (it should sizzle when tofu hits the pan) add tofu and salt.

Instructions to make Roasted Tofu and Pineapple with Peanut Sauce:
  1. In a food processor combine peanut butter, coconut milk, 5 Tbsp of hot water, lime juice, sugar, soy sauce, ginger, garlic, hot sauce and a pinch of salt.
  2. In a large bowl whisk together the peanut oil, a pinch of salt and the red-pepper flakes.
  3. Cut the tofu in bite-size pieces.
  4. Heat oven to 500 degrees F.
  5. Add tofu and pineapple to the bowl and carefully mix to coat pieces with the oil mixture. Place in a baking sheet lined with parchment paper.
  6. Roast in oven for 10 minutes, then turn them and roast for 5 to 10 more minutes to caramelize pineapple and brown the tofu.
  7. Serve with cilantro leaves and the peanut sauce.

Top with scallions and sesame seeds. Once the oil is hot (it should sizzle when tofu hits the pan) add tofu and salt. Add cornstarch to the remaining sauce and whisk until smooth. This recipe uses my go-to method for pan-frying tofu. Slice the tofu into squares (see the photos below for reference size).
