Instructions to make Fettuccini with uni-cream sauce:
  1. Cook 200 g fettuccini in boiling water with an ample amount of kosher salt (1 handful) for 4 minutes.
  2. Drain and wash pasta in cold water.
  3. Combine sauce ingredients in a bowl. Mash with a fork. (You can also use a mortar and pestle for this)
  4. Combine cooked pasta and sauce over low heat for 3 minutes.
  5. Plate pasta with nori strips and whole uni on top.

Any variety of mushroom will work in this creamy vegetarian pasta sauce, but we particularly like a combination of shiitake, oyster and cremini. Add the beer, cream, and lemon juice, bring to a low simmer. For Creamy Wild Mushroom Sauce - and Assembly : Heat the olive oil in a large skillet over medium-high heat.
