  4. Set aside oil from the pan, leave about 4 tbsp oil in the pan
  5. Add chopped ginger & garlic, stir for 1 minute, and then add water, stir well
  6. Stir in brown sugar, oyster sauce, soy sauce, bring to a boil
  7. Add the mixture of cornstarch, stir well until the sauce has thickened. Add some salt if necessary
  8. Add fish into the sauce, stir well, make sure that all fish are coated with sauce.
  9. Add sesame seeds for garnish

Topped with ginger and scallion and serve with steamed rice. Meanwhile, in a small bowl, whisk together the ginger, garlic, soy and oyster sauces, the lemon juice and sesame oil.
