In a large bowl combine lamb, scallions, onion powder, oregano, rosemary, garlic powder, cumin, thyme, salt and pepper, to taste. It consists of small pieces of meat and sometimes vegetables grilled on a skewer served with cooling tzatziki sauce, so basically our modern day kabob, or kebab or shish kabob or skewer.   8. Cook the lamb skewers directly on the pre heated Bbq (medium heat). Cook them for 3/4 minutes from each side.
  9. Place the cherry tomatoes parcel directly on the bbq and cook for about 4 minutes.
  10. Grill the courgettes and pepper directly on the Bbq for 2 minutes from both sides.
  11. Toast the pitta bread on the bbq from both sides
  12. In a mixing bowl add in grilled vegetables and lettuce. Mix it all together.
  13. Plate it up

Add the scallions, garlic, cucumber, yogurt, mint, olive oil, lemon zest, lemon juice and a little salt and pepper to a food processor or blender and puree using the pulse button to start and puree button to make smooth. Taste and adjust seasoning with salt and pepper if needed. Transfer to a container until ready to use. While lamb is resting, make the Tzatziki Sauce by combining all ingredients in a medium bowl. Check for seasoning and adjust accordingly.
