  2. Take 600 grams lean mince turkey
  3. Prepare 1 small onion, minced
  4. Get 3 garlic cloves, minced

  6. Take 2 tbsp fresh bread crumbs
  7. Take 1/4 tsp allspice

You can make these on the barbecue, in a skillet, on a bbq stick or off the stick. Though kofta kebabs are typically made with ground lamb, turkey is a nice, light alternative. The meat can be seasoned and shaped around the skewers well in advance, so with a little prep & planning, dinner can be on the table quickly. I had some ground turkey the other day and knew I wanted to do a skewer with it and found inspiration on Skinny Taste with Gina's "Persian Turkey Kofta Kebabs".

Steps to make Persian Turkey Kofta Kebabs:
  1. In a large bowl combine until evenly blended the ground turkey, onion, garlic, parsley, breadcrumbs, spices and seasoning.
  2. Divide into evenly sized portions, I used a medium spoon to scoop the meat out. Should give you about 12-14 koftas.
  3. Roll into log shaped ovals. Place on parchment paper and refrigerate for at least 30 minutes.
  4. If choosing to use wooden skewers, soak them in cold water for at least 30 minutes before grilling.
  5. When ready preheat grill to high.
  6. Carefully insert the skewers through the meat.
  7. Grill for 10-15 minutes on indirect heat turning occasionally, until meat is no longer pink.
  8. While the koftas are grilling, whisk together the lemon juice, olive oil salt and pepper.
  9. Add the spinach, onion and toss to lightly coat the leaves in dressing.
  10. To serve either, fill the pita bread with the koftas and top with spinach or serve with the spinach on the side. As I said you can also serve without pita bread.
